About the Chuvash People

3. Pinch the edges, leaving the filling exposed in the center. Brush the pyuremechi with beaten egg.

Shyrtan (Meat Dish)

Shirtan (Шыртан)

Ingredients:
- Lamb stomach — 500 g.
- Lamb meat — 1950 g.
- Garlic — 10 g.
- Bay leaf, pepper, salt.
Instructions:
1. Thoroughly clean and prepare the lamb stomach.
2. Cut the lamb into pieces and mix with garlic, salt, pepper, and bay leaf.
3. Stuff the stomach with the meat mixture and sew the opening shut.
4. Rub the shyrtan with salt and place it on a baking tray with the seam side down.
5. Bake for 3-4 hours until golden brown. Serve hot.

Homemade Sausage

Ingredients:
- Onion — 50 g.
- Millet or rice — 200 g.
- Pork or lamb fat — 150 g.
- Intestines — 300 g.
- Water — 360 g.
- Salt.
Instructions:
1. Add fat, onion, and grain to boiling salted water. Cook until half-done.
2. Clean and prepare the intestines by washing and turning them inside out.
3. Fill the intestines with the prepared mixture and tie the ends.
4. Boil the sausages until fully cooked. Serve hot.
